Course: Appetizer, Sauce
Cuisine: Latin American, Mexican
Diet: Gluten Free, Vegan
Servings: 8 ¼ cup per serving

Ingredients

  • 14 oz can diced tomatoes, drained with liquid reserved
  • ½ medium brown onion, chopped (any type of onion will work)
  • 1 to 2 jalapenos, sliced (see notes below on how to control level of spice)
  • 1 cup cilantro, packed into cup (about 1 big handful)
  • ½ to ¾ teaspoon sea salt (start with ½ tsp)

Instructions

  • Add all the ingredients along with about half of the reserved tomato juice to a food processor or blender and pulse the mixture together until it's combined but still has small chunks. You want to make sure all the ingredients are chopped up well, but not pureed. If the salsa seems too thick just add a little more of the reserved tomato juice. How liquidy you want the salsa is a personal preference.
  • Taste the salsa and add more salt if needed.
  • Use the salsa on chips, tacos, and burritos. This recipe makes about 2 cups totaling 8- ¼ cup servings.
  • The salsa will keep in the fridge for up to a week or in the freezer for up to 3 months in an airtight container.

Notes

*For different levels of spiciness:
  • Mild- omit the jalapenos altogether
  • Medium- remove the seeds from the jalapeno and use just one pepper
  • Hot- leave the seeds intact and use just one jalapeno
  • Extra Hot- leave the seeds intact and use 2 jalapenos
*If you mistakenly make the salsa too hot simple pulse in more diced tomatoes.
