- 16 oz silken tofu
- 1 cup peanut butter, all natural salted
- ⅓ cup maple syrup
- ½ teaspoon vanilla
- ⅛ to ¼ teaspoon sea salt
Add the silken tofu, peanut butter, maple syrup, and vanilla to a food processor. Then blend on high until fully combined.
Taste for salt and add between ⅛ to ¼ teaspoon depending on your preference. The salt helps to bring out the flavor. If the pudding tastes bland it needs more salt. Add a little at a time to avoid adding too much. The amount of salt will also be dependent on how salty the peanut butter you used was.
Pour into serving dishes and put into the fridge to set for about 20 minutes.
To serve, top with coconut whipped cream, ground peanuts, and chocolate shavings.
