Vegan Peanut Butter Pudding Recipe

Ingredients
 

  • 16 oz silken tofu
  • 1 cup peanut butter, all natural salted
  • cup maple syrup
  • ½ teaspoon vanilla
  • ⅛ to ¼ teaspoon sea salt

Instructions

  • Add the silken tofu, peanut butter, maple syrup, and vanilla to a food processor. Then blend on high until fully combined.
  • Taste for salt and add between ⅛ to ¼ teaspoon depending on your preference. The salt helps to bring out the flavor. If the pudding tastes bland it needs more salt. Add a little at a time to avoid adding too much. The amount of salt will also be dependent on how salty the peanut butter you used was.
  • Pour into serving dishes and put into the fridge to set for about 20 minutes.
  • To serve, top with coconut whipped cream, ground peanuts, and chocolate shavings.
