Combine the frozen strawberries, sugar, and water in a medium saucepan. Heat over medium for a few minutes, stirring occasionally, until the strawberries are fully thawed and soft, and the sugar has completely dissolved.
Transfer the strawberry mixture to a food processor or blender and puree until completely smooth. You can skip this step if you want a chunky sauce.
Strain the puree through a fine-mesh sieve back into the saucepan to remove any seeds.
If the sauce is thinner than you'd like, simmer over medium-low heat for a few minutes, stirring frequently, until it thickens. It's typically good once it coats the back of a spoon.
Stir in 1 teaspoon of fresh lemon juice, taste, and add more if needed. The lemon juice should brighten the strawberry flavor without overwhelming it.
Allow the sauce to cool before serving. It will thicken up a bit.
