Then I simmer the mixture over medium heat for a few minutes, stirring occasionally, until the strawberries are fully thawed, soft, and releasing their juices. When ready, the sugar should be fully dissolved.

Puree: I transfer the mixture to a blender or food processor and puree until nice and smooth. If you like a chunkier texture, skip this step and leave the cooked strawberries whole.
