Made with simple ingredients, my vegan almond flour cake is soft, tender, and perfectly sweetened. It's an easy plant based dessert that's easy to make and delicious.
Preheat your oven to 350°F (175°C). Grease a 9-inch round pan or springform pan and line the bottom with parchment paper.
In a large mixing bowl, whisk together the almond flour, all-purpose flour, sugar, baking powder, baking soda, and salt, if using.
In a separate bowl, combine the plant milk, room temperature melted vegan butter, vanilla extract, and apple cider vinegar.
Pour the wet ingredients into the bowl with the dry ingredients. Stir just until the batter is smooth and well-combined. The batter should be thick but pourable.
Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean or with a few crumbs attached.
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
