Chesapeake Bay seasoning, better known as Old Bay, has a distinctive flavor that's both savory and slightly spicy, with a hint of sweetness. The unique blend includes celery salt, paprika, black pepper, cayenne, and mustard just to name a few. It's a complex combination of spices with an irresistible flavor.

Old Bay In Vegan Dishes

While the Chesapeake Bay style seasoning was crafted for seafood, it works wonders in vegan dishes too.

I love to use it on roasted veggies, vegan chicken nuggets, and baked tofu. And it's the star seasoning of my vegan crab cakes. Some people even use it to rim their Bloody Mary glass.

Cajun Seasoning vs. Old Bay

Old Bay and Cajun seasoning are both fantastic spice blends, but they bring different flavors to the table. Cajun seasoning packs a punch with bold, spicy notes. It's a staple in Southern and Creole cooking. It's perfect in dishes like jambalaya and blackened tofu. I use it in my delicious vegan red beans and rice.

On the other hand, Old Bay hails from Maryland and has a more savory, slightly spicy flavor. It offers a balanced, herbal flavor with milder spice, making it versatile for various recipes. Chesapeake Bay seasoning is amazing on literally anything.

  • Sweet Paprika: Adds mild sweetness and vibrant red color.
  • Smoked Paprika: Introduces a subtle smoky flavor, enhancing the depth of the seasoning.
  • Warm Spices: Ground nutmeg, mace, cinnamon, cloves, allspice, and cardamom contribute a warm, aromatic quality, giving the blend its signature complexity.

  • Crushed Red Pepper Flakes: Adds a spicy kick. You can also use cayenne pepper.
  • Freshly Ground Black Pepper and White Pepper: Offer different intensities of heat, with black pepper being sharper and white pepper milder.

Ingredients
 

  • 2 teaspoons salt
  • 1 tablespoon celery seed
  • 2 teaspoons sweet paprika
  • 1 teaspoon dry mustard
  • 1 teaspoon ground ginger
  • 4 whole bay leaves
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground white pepper
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground mace
  • ⅛ teaspoon ground cardamom
  • ⅛ teaspoon ground allspice
  • ⅛ teaspoon ground cinnamon
  • Pinch of ground cloves

Instructions

  • Add all the ingredients to a spice grinder. You can also use a small blender or food processor.
  • Blend everything together until it becomes a smooth powder.
  • Store the spice blend in an airtight container or jar and in a cool, dark place.
