Rich, creamy, and full of smoky, spicy flavor, my homemade Vegan Chipotle Mayo is out of this world! It takes just minutes to make and only requires 2 simple ingredients. It's the perfect spicy sauce for slathering on your favorite sandwiches, mixing into dressings, or using as a tasty dip.
This amazing vegan sauce was inspired by my love of canned chipotle peppers and the endless ways to use them. As a chef, they are one of my all-time favorite ingredients. I puree them and mix them into a lot of my best vegan recipes.

- Chipotle: I like to use homemade chipotle puree and think it provides the best flavor and texture. However, you can also use just the adobo sauce of canned chipotle peppers, whole chipotle peppers, or ground chipotle.

How To Make Vegan Chipotle Mayo
- Create the Base: Put the vegan chipotle mayo ingredients into a mixing bowl.
- Whisk Well: Combine until the chipotle puree is evenly distributed.
- Taste and Adjust: Give your mayo a taste. If you want more heat or a smokier flavor, add a little more chipotle puree.
Pro Tip: Mayo is already salty. Hold off on adding any extra seasoning until after the chipotle puree and mayo are well combined.

One of the best things about making homemade chipotle vegan mayo is that you can get creative with it! With just a touch of this or a dash of that, you can customize it to suit any dish.
- Fresh Herbs: Stir in chopped herbs like cilantro or parsley for a fresh aromatic twist and then spread it on my yummy black bean burgers.
- Zesty: Add a squeeze of fresh lime juice, lemon juice, or even apple cider vinegar to add a touch of zesty tang.
- Garlicky: Stir in a pinch of garlic powder to add another layer of depth. You can also mix in finely diced fresh garlic for even more intense flavor.
- Creamy Avocado: Blend in half of a ripe avocado and then use it with your favorite Mexican recipes like burrito bowls.

Substitutions
Not a fan of mayo or can't find canned chipotle peppers, no problem! These substitutions allow you to adapt my vegan chipotle mayo recipe based on what you have on hand or your preferences.
Substitutions for Vegan Mayo:
- Vegan Yogurt or Vegan Sour Cream: For a lighter consistency with a little tang, both of these options work well. They create a more dip-like consistency, ideal for dressings and dips.
- Silken Tofu: Blend silken tofu until smooth and then whisk in the chipotle puree. This substitution works well when you want a thicker, creamier texture that is oil free.
- Cashew Cream: Soaked and blended cashews make a rich, nutty base that complements the smoky chipotle flavor.
Substitutions for Chipotle Puree:
- Adobo Sauce: Use some of the sauce from a can of chipotle peppers. This option works well if you don't own a food processor or you want to add milder chipotle flavor.
- Whole Chipotle Peppers: For a more intense flavor, puree 1 whole canned chipotle pepper together with the mayo. Keep in mind, this will create very spicy vegan chipotle sauce so you may need to add more mayo to control the heat.
- Ground Chipotle Powder: Can't find chipotle pepper in adobe sauce? Use ground chipotle powder instead.
Storage
Store your vegan chipotle mayonnaise in an airtight container in the refrigerator. It will keep for up to 2 weeks. It's important to make sure you keep it cool. Mayo will spoil if left at room temperature for too long.
Top tip
Take it slow with the chipotle puree. Add just a little bit at first, then taste and adjust. This way, you won't drown out that creamy mayo goodness, and you'll end up with the perfect balance of flavors that suits your taste.
