  • Use Pumpkin Puree, Not Pumpkin Pie Filling: Unless the recipe specifically says otherwise, use plain canned solid-pack pumpkin. Pumpkin pie filling already contains sugar and spices and can throw off the balance of the recipe.
  • Watch the Moisture: Pumpkin contains a lot of water, which helps keep cakes, breads, and muffins soft and moist. Too much, however, can make baked goods gummy or dense, so stick to the amount called for in the recipe.
  • Different Pumpkin Purees Can Vary: Some brands of canned pumpkin are thicker than others. If your puree looks unusually watery, you can blot it gently with paper towels before using it in recipes where texture matters.
  • Don't Add Extra Pumpkin for More Flavor: Adding more puree usually adds more moisture rather than stronger pumpkin flavor. If you want a more pronounced fall flavor, add a little more pumpkin pie spice instead.
